Hi, All:
Felt defeated last week when someone beat me to an easy to find Hen of the Woods and left only some little remnants. Today I got my revenge! This thing has GOT to weigh 8 or more pounds. It was bigger than the net laundry bag I bring into the woods for collection purposes! Had to carry it out in two hands. Made it home with essentially no damage, although it was a long walk.
Doin' the happy dance!

No! The woods are fairly deserted and the one person (jogger) actually gave me a tip on where to find other varieties of mushrooms!!! Another day. "Butchering" and cleaning this mushroom took me over an hour!

I saved some of the tender "branches" and broken "leaves" for making some soup, per a YouBoob video I watched.

Had to go out to get the apple cider, but my wife has everything else in the pantry for the marinade. We have a Nesco dehydrator, so should have some maitake jerky in the next 24 - 48hrs. She's making chicken mushroom soup with some of the inner frond stems right now! Really surprised at my wife's enthusiasm. She even called her mother to tell her of my foraging success and her plans to make the soup!

That's great, getting the in-laws in on the wild mushroom feast! Glad you're trying them. You won't be disappointed. Only problem with the mushroom jerky is that an amount that used to last all winter, gets eaten in like a week! Just make sure to check on the dehydrator regularly. I had one batch that I let go a bit too long and it got crispy instead of chewy.

Jerky making underway. 2 trays only. I think it's a bit salty for my taste. Might try more apple cider and less soy sauce in the next batch.

When I've made it, I used all of the ingredients in the recipe, but played with the proportions a little each time. In the "cooking with wild mushrooms" facebook group, I've read some people saying to marinate for less time than the recipe calls for, Taste more mushroom and less sauce.

For batch #2 I added more cider to the marinade and that made it far more palatable and way less salty. Batch #3 is underway. I made my own marinade with apple cider, burgundy wine, orange juice, some brown sugar and cinnamon. It's basically the recipe for "Vermont Glog" which I love to drink this time of year. Bet it will work great. Here's hoping!
