These seemed to be growing out of the dirt, but it could have been a root underneath.

Taking a glance at the substrate in the photographs, I can see wood fragments. This is a wood-lover.

They were pretty much unharmed, do you think it's worth it to go harvest and eat?

Let's get them identified to species level first. I'm leaning towards the genus Pleurotus, but let's wait for others to chime in.
