I'm doing PF-Tek for the first time.
8/14/15: Inoculated jars (1 syringe Penis Envy, 1 syringe PF amazonian cubensis). Placed in 80° incubator. Cakes took a few weeks to colonize, no contamination. 10/3/15: Took out of incubator and dunked. Cakes felt solid and hard, smelled like mushrooms. Dunking definitely increased their size significantly. 10/4/15: Rolled in verm, put cakes into shotgun fruiting chamber on top of aluminum foil squares. 3-4" of perlite on the bottom. Had some difficulty keeping humidity up, so I've closed ~75% of the holes with tape at this point.
Fanning and misting 3-5x/day. Humidity readout ranges from 92-99, mostly around 92/94. Not entirely sure how accurate my humidity gauge is.(http://www.amazon.com/AcuRite-00325-Comfort-Monitor-Black/dp/B004K8RF10/ - reviews say +/- 4%)
10/14/15: Took these pictures. The only change from the start is that they've gotten somewhat fuzzy. I don't THINK it looks like any of the pictures of cobweb mold, but I'm new to this, so if that's cobweb, that'd be good to know.

Anything I can do better? My impression is that I should have started seeing pins pretty soon after the dunk and roll, but maybe I've misread things. If that's the case, when do y'all think I might start seeing pins?

Cakes look fine to me, no sign of mold I can see in the pictures. Did you leave your cakes to consolidate in their jars for at least 7 days after they reached 100%? If not they are probably sitting there consolidating.
The humidity in the sgfc itself does not need to be 90%+ its the micro-climate a few mm above the surface of the cake thats important, which is why we roll in verm to keep the moisture content on the surface up, and spray and fan once they loose their glisten.
The major pinning trigger is evaporation from the surface, so as much FAE as possible is beneficial, which is why we have 1/4" holes on all 6 sides. Hence you should remove your taped up holes to increase FAE. How far apart are your holes? All 6 sides?
Also you can trim the tinfoil back a bit, so as it is just slightly larger than the base of the cake itself to increase airflow around the cake itself from the perlite air currents below.

First remove the sponsor name out of your post since you're referring to cultivation. Remember spores are only for microscopy use only. 
Just give them some more time, those cakes don't look bad in anyway. Patience. 
Look's like your holes in your SGFC aren't quite spaced every 2 inches. You might want to read the principles of the SGFC. With that said, yours will work.

@Shroomperspective: Cakes were 100% by September 3rd or so, and I took them out on October 4th, so assuming I didn't need to change anything (I just left them there in the incubator), I think they had a month to consolidate.
Would it make sense to move my humidity meter down towards the bottom of the FC?

Lots of people on here would probably say move your humidty meter outside of the chamber If you follow the PF tek SGFC to the T you'll be good

The humidity meter is best off measuring the humidity of your trash can.

Yeah, I keep hearing that about the humidity meter.
It's weird..I recall reading through posts back when I made my FC and there was a ton of talk about how SGFCs have way too many holes, that you only need a couple of holes, that if you made one you should tape most of the holes up to increase humidity, etc. Now I can only find threads and comments saying to follow SGFC to a T and to ignore your humidity meter.
I removed most of my tape, so that I roughly have holes every 2 inches on all 6 sides, then took each cake out and cut off the excess aluminum foil. While the cakes were out, I re-saturated my perlite (it had gotten a little dry over the last 10 days - I suspect that's because I only have ~3" or so). Cakes are back in and hopefully will start pinning soon.

I see knots on a cake. I am sure that things are good. You could try keeping one cake wetter than the others. See if it does better
