Hot sauce recipes & discussion

I grew a bunch of peppers this summer and am finally ready to start making some sauces!
Here is the first one I am trying: Belizean Style Habanero Sauce

I am not strictly following the recipe but this is the basics for the sauce I am making.

It changes every time I post it or do it, because it's not really a set recipe, just a general guideline
Basic Green Sauce 4-6 Serranos (seed half for milder sauce, it can be pretty hot) 1/2 onion 3 cloves garlic 3/4 cup chicken broth couple sprigs of cilantro 1tbsp olive oil
Chop vegetables, saute (minus garlic) for 3-4 minutes over high heat, add in garlic and saute until fragrant, add broth and cilantro, bring to boil and reduce to 1/2 to 1/4 cup of liquid (depending on how thick you want the sauce) then puree it all.
Quick, easy and cheap to make and is great for burritos and Mexican food, goes good with scrambled eggs too.
Ghost Pepper Buffalo Wing Sauce 2-3 Ghost peppers (can do just 1 but I always did 2-3) can do this with other hot peppers as well 3 tablespoons butter little less than a half cup of Franks Red Hot few splashes of Tabasco
Slice up peppers and melt butter in sauce pan, add ghost peppers and cook over lowest heat possible for 15-20 minutes. Add in hot sauces and bring to a boil and cook for 1 minute. Whisk together right before use (it will separate as it sits).
I cook the wings, and toss them with the sauce and let them sit 5 minutes and toss again, and then serve.

I love a good green sauce I have a bunch of canned salsa verde I have yet to use much of.
Ended up doing a raspberry variation of the recipe I posted in the op, I think it came out pretty good. The real test will come with dinner though 
Used 2 habenero's to make 2 decent sized hot sauce bottles worth, still pretty spicy too 
Can't even imagine ghost peppers, I picked one of those mega hot hybrids earlier an am afraid to cook with it

3 ghost peppers? What the fuck? I guess I'm just a pussy because there's no way I'd be able to eat more than 3-4 of those wings.

Yeah. They were pretty hot, my face was melting off after eating them, but I liked it. The real downside to it is the stomach cramps that start a few hours later. That shit (pun intended) is pretty terrible.

What a pussy! LMAO They're hot but that's just a ridiculous reaction LOL
I'm pretty acclimated to hot shit, but when I tried my first bite of ghost pepper it was substantially hotter than anything I'd ever eaten before and it kinda kicked my ass for a minute. I ended up pacing back and fourth and couldn't think straight. It was the first time I was making the wing sauce and I had to try them to see how hot they were to decide how many to use. So I'm in the middle of cooking and pacing back and fourth for a minute and then try and get back to it and keep forgetting what part of the process I'm on. Was kind of a weird unexpected effect.

I like to make my sauces pretty hot but mild enough I can eat a lot of it without fucking myself up 
For some recipes with just habenero's even using one whole decent sized one can be overkill. I forget how much hotter ghost peppers are though.
I love overly spicy food but it sucks when it gets to the hard to eat and painful to process point 
Berries go great with spice since they tend to mask it a bit and add extra flavor and sweetness. Spicy berry bbq is amazing...

Ghost peppers are to habaneros what habaneros are to jalapenos. Not by pure math but that giant leap of spiciness between the habanero and jalapeno is pretty much the same IMO for the difference between ghost pepper and the habanero.
I like having my face melt off, I've been a huge fan of overly spicy food for a good portion of my life. I just don't like the stomach cramps that always come with it. Though that is never enough to stop me from eating it.

Not sure of an exact recipe but I bought this hot sauce on a couple of occasions that consisted of orange habanero or scotch bonnet peppers, very finely minced carrots, possibly some minced onions and/or garlic, and some vinegar. I think something similar is made in Bolivia, but the guy who made/sold it was from Jamaica or somewhere like that.

Habeneros spice can vary a ton though.
Here is what I found:

So ghost chilis can be like 2-3x as hot an habeneros can be like 75- almoat 150x hotter than jalapeno's.
Considering the spice difference that is a huge difference for sure. I still feel like I have read of some habeneros being closer to 700,000 but can't find it.
I love spice but most habeneros I have tried are plenty spicy for me, like 1/2 of a pepper can heat a whole dish easily. Anything stronger scares me

I have a big bowl full of habenero's and some more out on the plants so I plan to try out a lot of recipes.
I need more glass hot sauce containers first though I want to try a tropical hot sauce using mango and or pineapple. Also a mega citrus one.
