overcooked grain?
    #2237229 - 01/12/04 01:59 PM (20 years, 1 month ago)

is it possible to let the grain soak too long? a lot of my rye berries exploded, more than usual, and it seems kinda soggy. i also cooked the grain on low heat for an hour or so but the it sat in the water and cooled for another few hours, oops. but is it still ok?

Of course you can over soak grain. A good indicator that you have is either a sludgy material in the soaking water, or the seeds have germinated.

yea, i've always thought the berries should be kinda firm or else they'll all get smushed up and the mycelium won't be able to spread as freely. these berries i can smush with my fingers no problem, like putty. rats.

Don't use Rye Berry myself, so you might be better off waiting for an answer from someone who uses that particular substrate.

In answer to the general question though, yeah you CAN overcook it.

I do the opposite, I don't simmer at all.

A good method that seems to always yeild the correct moisture content is to add dry rye berries to a pot, cover with water. Bring to a boil, reduce heat to 50% and simmer for 45 minutes stirring frequently and always keep them submerged in water. As soon as the 45 minutes are up put them in a strainer and rinse with cold water and let drain for 15 minutes. Load jars / bags and PC.

I've horribly overcooked grain once, popcorn in this case, and compounded the mistake by forgetting to rinse and drain them. Once in the jars and pressure cooked they expanded MORE and filled the jars completely, not to mention that there was about 2 inches of solidified starch in the bottom of these jars. So essentially I had fucked up jars , but I innoculated anyway and they grew just fine. Not as quick as jars that could be shaken, but the mycellium was SUPER dense and puffy... It looked like a big marshmellow expanding and eating up all the corn in its way. Haha too much moisture. But you should be fine. Just make sure you leave LOTS of room to shake them up and rinse well.
