What are some good tasty mushrooms to cultivate?

I cook a lot and cubensis taste like ass to me.
My first thought was truffles, because of how difficult they are to find (and the fact that they're psychedelic is kinda cool). I just don't want to wait YEARS for something I can eat. I'm still very noobish and that's kinda high level stuff.
What are some good mushrooms you've grown, or know of that a noob can grow and eat? I am starting WBS jars and monotub now.

Psychedelic truffles are actually really easy to grow! Culinary truffles are not psychedelic and are mycorrhizal, they only grow on tree roots, which is one reason they are so hard to cultivate and find.
The kind of truffles you are talking about can be grown very easily in a matter of months!

Grifola frondosa...
which is Maitake aka "Hen of the Woods"
They taste somewhat like morels, though an "earthier" flavor.
Oyster mushrooms are pretty good also and are easy has hell to grow.
I'm sure there are many others that are tasty... maybe even better.
These 2 are what I have most experience with as far as growing.
The Maitake can be tricky because not all strains will fruit. Best way to grow them is by acquiring a live culture from a known fruiting strain. I've had limited success with them and need to get a new culture.

Morels are probably the hardest mushroom to grow. Grow portabella.
-------------------- Stop experimenting half way through your first grow. Grow it to maturity, watch it, learn from it. Do this a few times then experiment with different ideas and figure out what works best for you.

I just finished some costa Ricans from SW that were relatively delicious. Went well with a number of dishes. Monotubs and whole oats.
