Give it a quick sniff. If it smells like dirt/feet its definitdlh cobby

I hope it's not another type of mold either.
All my jars are progressing very fast from G2G, but the growth is never that rhizomorphic. Starts out super thin/cottony and spreads fast, with bulbous cotton balls on top.

Gave a couple some big sniffs a bit ago. I'm not sure what I smelled because my sinuses are sorta clogged. Now I have some kind of weird headache going on and slight nausea.

Not much experience.
When I spray water on that fluffy growth, is falls flat to reveal the substrate.

looks like cottony mycelium growth to me... If I were you, I'd take one that's 100% colonized or near, take it outside, open, cover with a small layer of fine pasteurized potting soil (if it's straight from a fresh bag, I'd even dare go without the pasteurizing) and put a transparant plastic bag over it. Give fresh air outside twice a day, see what happens. If it turns green, toss it. If you get shrooms, trip.
