Noob Just Can't Get Pins

Hello all... I have been through about 15 fully colonized and condensed substrates and I just can't get any pins. I must be doing something fundamentally wrong. Please look at the pictures and let me know if you spot anything:
The setup:

The guys who keep dying. Not sure if they are dying of thirst or over hydration:
 Birthed some 3-4 weeks ago and this is all I got.
I birthed these 3 last Tuesday. dunk and rolled and put them in the fruiting chamber wednesday:

 The top guy fell over into the perlite and I washed him off and that's why he's missing his vermiculite...
Room temp is about 71 degrees. Mist 2-3 times per day, Fan 5 times per day.
Any help would be greatly appreciated. I am really at a loss...

Are you giving them at least a full week after 100% before birthing? Also but not an absolute deal breaker fine verm is much better, and only fan right after misting

-------------------- Stop experimenting half way through your first grow. Grow it to maturity, watch it, learn from it. Do this a few times then experiment with different ideas and figure out what works best for you.

Well, the perlite is brand new. It was soaked and allowed to drain last Tuesday (9/30). I dipped my finger in and it appears slightly moist at best. Is it possible 5+ inches of perlite would dry out in a week? Does that mean the room has too much natural FAE?

Turn off any fans and if your ac or furnace are running a lot close the vent a bit. 5 inches of perlite can dry out fast under certain circumstances especially if the climate is dry. Toss it in the tub and soak it down with the shower head once a week if you have to. Place the cakes together and stop fanning. I never fan anything ever. Certainly a proper SGFC doesn't need anymore fanning than you already get when you open the lid to mist.

Have you tried re-duking the cakes that have been out for 3 weeks? Another 24 hour soak might get them going, I had the same problem with mine previously, dunked after two weeks, pins appeared the next day and it was full speed ahead from then on

Hey everyone. Just wanted to say Thank You! The cakes were dry, and misting them more heavily was the answer. I think with a proper sgfc you do not need to fan at all. This was the difference maker for me. You should see my pinset.

Just curious if anyone has any incite into the pics above... Other than the big one in the top cake, all of my shrooms have stalled out. They look very sad. Any ideas why fruits would stall immediately after pinning?

Poor FAE, RH too low, insufficient water to support, contams, genetics, too cool of temps are a few.

Its aggravating because I have a SGFC built to spec and i re-dowse the perlite once a week. I can't imagine its RH... Perhaps FAE, but how is the perlite drying out so quickly if this is no good. Perhaps it is my temp is too low.

Looks like stroma on those cakes, thats not helping. Also PE typically do terrible on cakes, due to long pin times the cakes lose a fair amount of water while pinset comes in. PE needs loads of water and demands a better supply than most. It also gets damaged from overmisting easier than other varieties.
I recommend that you cut back the misting, no fanning, and try to supply water to the pins via the bottom. Sit the cakes in a saucer of water.

PE also grows really slow. They might not yet be stalled. They also tear their veils early and continue to grow long after that point. Give em some time.

A saucer of water? How deep? Maybe I just bend the foil up and fill that with water 1/4"?

It doesn't need to be much more than a puddle. 1/8" - 1/4" is fine. Pour off the excess every morning and replace with fresh.
