eating like kings....

My friends and i have been eating like kings the past 2 days:

Fish Roll with Compound Butter (Roulade)

Smoked Salmon Cakes

LS and I had the roulade....it was damn tasty...

a butter that is softened and various herbs, spices, flavorings added. Like adding chopped sage to softened butter, putting it back in the fridge.. it's a compound sage butter.

Once you soften the butter and add the herbs you can roll it up in plastic wrap and twist the ends like a hard candy. Makes a nice pat of butter otherwise put it in a tub or bowl.

Well, since it was a fish dinner, we had some white wine to go along with it

nothin too fancy, just some Clos du Bois.

Ohhh maan.


I had the pleasure to eat BOTH of these kremkook specialties.


The fish roll was amazing. There was this contrast of textures precisely designed to cater with the varying layers.

You start with the hardest meat, marinated salmon with cosher salt and dill weed and cilantro. Then the white snapper, then the softest layer was the juicy scallop in the middle.

I remember peering into the broiler as these beauts were cooking. This thick juicy layer of fish fat was melting to the surface, creating this bowl of fish "juice" cradled by the layers of fish meat.

Pull it out of the broiler, add a giant hunk of compound butter, which adds to the juices of the platter, more flavor, more herbs and spices.

The aroma was sexual....culinarily speaking.



Oh, and the salmon cakes were great too. Essence goes BAM!!!!
