Made a Mexican style soup. Basically Posole only I didn't follow any recipe and just threw things in I thought would work well together.
Starts off with Posole Rojo base. Has cubed pork, bacon, chorizo, pinto and black beans, hominy, onion, bell pepper, green chiles, fresh made roasted garlic and roasted tomatoes and cilantro and a few other seasonings, like bay leaf and cumin. Came out even better than I hoped. Glad I made a lot of it.

Today, I'm making Paprikash. Enough to feed an army. For a one person recipe, I usually use 3 green peppers, 1/2 of a yellow onion (or the whole thing, depending on taste), and a can of diced and unseasoned tomatoes. I've used fresh ones and heirloom ones, but the canned ones give it just enough juice. Salt to taste. Simmer on a stove for about an hour. Serve over egg noodles, polenta, or rice. Sometimes, I like to take some and throw it in a pan with a few eggs for breakfast.
I'll give you the recipe as my Dad told me. He has a thick, Eastern European accent.
First...you chop up da onion and put 'em inna pan. You cook 'em until dey soft and coming kinda clear. Den, you chop up da peppers and put 'em inna pan. You cook 'em until dey soft and start to changing da colors. Den, you put 'em tomatoes and cook 'em baybee! Low and slow. If you cook 'em too high, da water gonna evaporate.

I almost forgot.
Keep the lid on the pot while it's cooking so that it can cook in its own juices. Remove the lid for the last 10 minutes of cooking to let some of that juice evaporate.

Damn guys, thank you, looks amazing! I've been neglecting this thread as I've been eating out WAY too much. I'm going grocery shopping tonight, so I will make something from this thread and try to contribute something new tomorrow! Shroomer, the accent makes things sound very authentic, so I may be replicating that tonight!

I like this a lot. Tonight I was feeling simple and went with rice and beans. I'll contribute soon though

Damnit, I forgot to take pictures!!! 
Well, I made a turkey and acorn squash chili. It also had a few types of beans, onion, chipotle, tomatoes, tomatillos, green chilles, corn, cilantro, yellow and green squash, bell peppers, and tons of herbs and spices.
I threw all the stiff veggies, beans, tomatoes, and meats into the slow cooker with half the onion and cilantro, then, after a few hours, I added the remaining onion, cilantro, and bell pepper.
Tonight or tomorrow, I will make a rendition of ShroomerInTheRye's Paprikash tomorrow, as I have a ton of red and green tomatoes from grandma/grandpa's harvest. I intend to add chicken and serve it over tortillas, however (I apologize to the Hungarian community). I'll take pictures this time, I promise.
We'll see if it's up to you and your father's standards, Shroomer!

Try to slice everything thin-ish, and if you're using fresh tomatoes, I suggest a quick blanching to remove most of the skin. Good luck!

cheese crisp egg breakfast sandwich, takes 2 seconds to make and is bomb


instructions:
1. crack egg onto pan 2. push bread on top of egg and push and rub it in a bit so they fuse 3. start frying 2 slices of cheese. once egg side is done, flip over ontop of cheese and fry it in till it's crisp on the bottom.
if you wanna go crazy with the cheese, crisp fry a lot separately and just put over the sandwich at the end.
