 had an amazing meatloaf sandwich the other day, 50 beef, 25 pork, 25 lamb blend with lots of onion and peppers wrapped in bacon.
did some habenero hot sauce, melted swiss, and cole slaw. so yummy, really get to enjoy the lamb without it overpowering the other flavors.

turkey tacos with red rice and beans
had some fun 2 weeks ago for chinese new year at one of my jobs

Tangerine Shrimp

Whole Catfish with Szechuan Sauce

Red Velvet Lava Cake, Banana Wontons actually ate those too fast, and Coconut Creme Brulee

Love the turkey tacos and shrimp looks good . How does catfish taste btw? never tried it.

catfish is very good if it is prepared properly.
i like to get as much moister off of the fillets as i can with paper towels. cut the fillets in pieces. put the pieces in a zip lock bag with the breading. give em' a good coating. pick them out and then shake off the excess breading. then deep fry or pan fry the catfish to your liking. i like to use fryin' magic as the breading.

currently cooking up some burritos to replenish after some over night ski camping and shenanigans.
sweet potato, borccoli, onion, mushrooms, avocado, and sriracha mac n cheese with some greens and habanero sauce for good measure

I start culinary school on Monday so I'd like to participate. Tonight was Spanish rice topped with a slow simmered seasoned chicken garnished with cilantro. The wife and I enjoyed it. Not really a pic worthy meal but filling.
I'd like to do some pressure cooker recipes. Got a little 6 quart that'd make several different dishes. I'm pretty sure everyone has 1 so... That's all for now
