Yeah, those look hella good. This is what I made today: Chickpea, Avocado and Feta Salad. Not technically cooking, but whatever.
I also roasted some spaghetti squash. Haven't had that since I was a kid. It was

I've been really bad about food and cooking lately - I've been eating lots of variations of quesadilla/burrito/tortilla creations, and lean cuisines and red bull. It's terrible. I'm actually a bit leaner on the junk food diet though because I just don't really enjoy eating right now. I used to cook all the time and care about using whole ingredients and eating a whole rainbow of fruits and vegetables. Now I feel like eating just makes me feel sluggish even when I'm not eating dinosaur chicken nuggets for dinner. I switched insurance though and need a new doc, so I haven't been taking my thyroid meds for a bit and I think it's probably fucking me up a bit in terms of appetite and food in general.
I've gotta start eating super clean again(and taking the meds, it's really treatable but I'll be on meds for it for the rest of my life in order to manage it, so I should get on that again I guess) I might do some more short term juice fasting to kick start it, I used to fast intermittently in addition to clean eating regularly and I felt amazing.
I didn't cook anything today, but I did get some pho and it made me happy.

been working too much and having a lot of stuff going on. need to get the fridge and freezer cleaned out. didn't have power for 2 days last week.
i am planning on a decadent burger for a meal and have another idea not quite formed but excited.

A gluten-free diet will help with not feeling sluggish. Hard to get used to, but once you do, you'll feel amazing. Like a ninja. You are what you eat, remember that. Sorry for your troubles. Cheer up and be healthy

I've tried gluten free dieting and it didn't do much of anything for my energy levels. Not sure I believe the hype.
Is there any theory behind why gluten would make someone feel sluggish?
That being said, I do eat tons of fruits and veggies and almost all whole foods. Eating whole foods certainly does help my energy levels.

I think different people handle it differently.
I have lots of friends who feel like shit when they eat gluten,
I run off wheat bread.
seriously I can eat like 4 slices and I feel rad.
I think lineage plays a big role. western euros have been storing grain for a long ass time and are probably more adapted to the diet

Nothing yet, but I'm about to make some coconut wraps with ground bison, olives, mushrooms, liver, cow heart, etc. Last night was ground kangaroo, spaghetti squash and some "no"-mato sauce my mom gave me the recipe for.

Gluten is toxic to the intestines and compromises barrier function through a couple different mechanisms. This allows the absorption of commensal microbes which stimulates an inflammatory response. This inflammation has been associated with a wide range of diseases, including systemic disease. I couldn't tell you exactly the pathological mechanisms leading up to feeling "sluggish" but inflammation has been implicated in all sorts of neurological issues including depression, chronic fatigue, and just general brain fog and what not. Some people are less sensitive and therefor don't notice much when going on a gluten free diet, others don't notice anything because gluten free diets are bullshit in many cases. Junk is junk whether it has gluten or not and many just substitute out for equally crappy or worse food. Beyond that, almost all grains and legumes share proteins with similar mechanisms to gluten and so it's highly probable that they exhibit a similar toxicity. I developed an autoimmune neuropathy last year and went gluten/dairy free for a while. Didn't really notice much difference. Then i cut out all grains/legumes/nightshades and saw some serious change after that.
Though of course it's not the only thing leading some people to feeling sluggish so it may or may not be your case either. I myself notice huggggge improvements in my energy when I wake up to a bowl of leafy greens. Sometimes I'll just eat spinach like chips and I almost feel like I had a small coffee

Hashimotos? My girlfriend has it and I've tried talking her on to my diet because it really helps But I get it. Sometimes it takes hitting rock bottom to make that sort of change.
