Have you ever tried to make cheese at home?

Hello.  I recently got an idea in my head to make cheese at home.  I found this website: http://www.culturesforhealth.com/cultured-food-expert-advice and they make it sound really easy.  I also told my boss about this but he said it was very difficult.  He said I should start with yogurt then work my way up to cheese.  He also said I would require a ton of milk to make cheese, which I was already expecting.

Has anybody here got any cheese-making experience (non-commercial)?  Is it really that hard?  Do you have any tips to share?

I looked into making my own mozzarela once and it looked very time consuming. If you work all the hours you would spend making cheese than you would have enough money for a years supply of cheese. It might be worth it to make a bunch and sell the extra at a farmer's market

yeh ive made ton of fresh cheese u need rennet n stuff. u can make ricotta an farm cheese quesoblanco quark panir ton of stuff with nice local fresh cream from cow or goats or anything with nipples:sadyes:

u can make super simple cheese really easy right now n you dont even need rennet or nething special jus some lemon juice n stuff

Yeah we make cheese sometimes. Whole milk, bring it to the boiling point, add a cup of lime juice, wait for it to curdle, strain with cheesecloth (we use a screen mesh) add salt, refridgerate. it's the most basic cheese recipe, I believe it is called chenna in Sanskrit, and all you have to do to make paneer is press it underneath a big pot of water for a few nights. delish.

I started making cheese several years ago.  There are many web sites for help.  I use whole milk and add extra cream.  Add some buttermilk or yogurt to the milk, plus rennet.  I usually make blue cheese, so I also add some of the blue mold from commercial blue cheese.  After the liquid sets up overnight like jello, I strain it through a fine cloth.  Putting a weight on the cloth wrapped curds presses out excess whey.

At this point I add salt to the cheese, about 0.4 grams of salt per ounce of cheese curd.  This blue cheese should age for about a month at 50 degrees, but I sometimes just put it in the fridge to age.  It takes longer at lower temps.  You can eat the cheese at any point, but it ages from something like cream cheese turning more funky blue over time.  It's really neat to see the pale blue mold cover the outside of the cheese.  The extra cream I use makes it really buttery.  Eating it is almost as good as sex!

This.  I have been hit and miss with mozzarella, but paneer is a cinch.  I recently bought  a magazine at tractor supply and it has guided me along to make some other soft cheeses as well.

The big things I have figured out is-
-the Internet contains so much conflicting information.  Each "cheese tek" will tell you their method is the gospel and everything else will be a fail. 
-you don't have to find raw milk, just stay away from ultra pasteurized.  I use milk from Aldi and it works well.
-if you fail at cheese, you can typically use it as a spread.
-don't throw out the whey.  It makes the best pasta, rice, bread, or pet food.

Yes, with cow, sheep, and goat.  Hard cheeses and soft.  With cow milk if you are going with store bought, it can be really iffy with some brands.  I recommend 30-min mozzarella to start, it's fun, quick and tasty.  But you need to be able to handle the stuff hot in the stretching process.

No, I haven't.

I've been wanting to for a while.

I looked up how to make mozzarella a while back, it doesn't seem too hard and I love mozzarella...

I'm going to try it eventually.

mozz is kinda tricky to get the temps jus right and you gotta pull it with jus the right amount of pressure
