I am currently dunking 5 of my cakes overnight. A couple of them have fairly large mushrooms on them already (possibly contamination, see above, possibly something else). Nevertheless I am dunking them anyway. Should I harvest the mushrooms that grew in the jar before rolling or not?

You could harvest them, or you could not. You should still get the same average yield. I'd let one grow for science!
Based on your pictures your cakes look perfectly healthy. Unless your cakes are foul and slimy at this point, I doubt the mushrooms that grew inside the jars were any indication of bacteria.

If theyre 100% colonized...dunk them for a good 12 hours. I like to leave those invitro ftuits on during the dunk, then roll em too. Sometimes they turn into massive fruits or nice clusters. Which make great clone candidates to agar.

Exactly. Invitro fruits are the product of great genes! Sometimes bacteria, as said previously, but in your case great genes!!

I have dunked my cakes for the second time and am getting some more fruiting. What sucks is that I am going on a 3 day trip. There is no one that will be able to mist or fan the cakes while I am gone. What would you do?
Would you pick anything fruiting, even if it is early and start the drying process and just start misting in 3 days again?
Would you leave mushrooms that are not ready to be picked on cakes, and just start misting again in 3 days?

Yeah your cakes would definitely dry up and stall out after 3 days of no misting.
A good idea would be to keep the bottom of the cake sitting in a small plate of water so it can at least stay hydrated until you come back, then resume your normal mist/fan schedule.

Idk cubes and cakes just don't mix IMO. They need soo much attention. I love set and forget
