I had just finished one rack portable rack-mount system for my studio--a Xeon e3-1231 v3 proc--when my main system crashed, and instead of replacing it I am going to set up a multi-core system in a big server case.
it is for music production, editing, etc. so the design goals are low heat, low noise, stability, and ability to run a lot of threads and render simultaneously. In addition, audio processing requires more cores.
Right now i was looking at the new i7's i7-5775c and i7-6600k and both have good features for audio rendering (especially the i7-5775c) but it uses only ddr3-2300. Both are only 4 cores. So I am probably going to go to the xeon haswell E5's or the haswell i7-58xx series 6/8 cores. The haswells don't 'look' as good on benchmarks, but they generate less heat and have more cores for the money. I need lots of I/O so i am pondering which to buy. right now my top would be xeon E5-2660 v3 (10 core) i7-5960x (8) xeon e5-2640 v3 8c. 6 cores i7-5820 or e5-2620 v3.
or maybe i do go with a i7-5775. remember, I am not gaming, Im going to use an nvidia Quadro workstation card with no fan. Any ideas?

Why are you worried about noise?
Can't you just get a high-end external sound card?
I would think that should be better anyway, since they are designed for this.
With regard to the processor, I'm sure the instruction set utilized doesn't change...
I'm not a hardware guy but generally I just look at the specs.
Instruction per second, cache, number of cores, etc.
I'm sure the Xeon's or another processor made for a server can take more of a beating tho.

A sound dampening case like the ones Corsair or Fractal Design make would help, along with some fans from Noctua.

I already figured that out. They are binned better by intel. That is, the selection process selects better components for the server chips.
The e3-1231 v3 im using right now is impressive for a $250 quad core. In many cases it holds its own against top-line i7's. I noticed that memory bandwidth in sandra measured 29mbs on my part, compared to about 21mb on my older i7-3770 (which is by no means a 'slow' or obsolete chip) and 25mbs max on an i7-4790K.
xeons also have dmi on chi (direct memory interface) which haswell i7's don't have. THe smaller instruction set makes for faster computing. The larger extended instructions on the i7-haswells are basically multimedia extensions for gaming.
I'm probably going to go with the 8-core xeon E5-2630 v3. For audio, more cores wins over speed since most DAW programs (I use cubase pro-8) will, for each track, where possible, assign a single core for that track to use. What this results in is lower latency, though a quad core is usually sufficient. In my case, playing electronic drums, I usually have 4~8 tracks going simultaneously when I play, at present my buffer is set for 6ms latency and I don't hear any pops or crackles (with the e3-1231 v3)
By the way im sold on noctuna fans and heat sinks.

Lol, I'm on a crappy Toshiba laptop :V
Well... not *that* crappy; I melted the camera and most of the keyboard with NP solvents and it still works great!

my mistake about my memory bandwidth measured 29GB/s on the e3-1231.
Benchmarks are overrated. The real test is real-world performance. I notice things like how 'snappy' or responsive a processor is, but most imortantly for audio, how much latency (i.e. what audio buffer size) I can use when playing an electroni drumkit live. So far I am at 6ms, but im going to see if that can be lower with this processor--i think it can.
If latency isn't low enough, one can hear a lag between the time they play a note and when they hear it.
