QUESTION: Grain Spawn - Duration, Storage

Hi,
I am producing grain spawn for the very first time. The jars are wonderfully white now, but I need to know, how to proceed from here on.
When producing mycelium rye grain (in my case grain spawn of the Pink Oyster), at what time should I stop to let it grow, and start preserving/storing it? And how (fridge, freezer, room) and how long to store it? Thanks.

2. You can store it in the fridge to delay pinning but why are you storing so much of it, rather than fruiting it?

Thanks for the answer. Fridge. okay, I will do.
Why so much? For selling spawn, and because I self am short of substrate for fruiting, have to create some more substrate first. Meanwhile the storing.
At what point of time is the grain spawn ready to be stored? When it is entirely white, I guess, right?
And how long can it be stored in the fridge?

When it's 100% colonized yes, and I can't say for sure because I'm not keen on the specifics for the species in question. I'm not certain what temperature is best either, though above freezing is a pretty safe bet. I wouldn't store any type of grain spawn for much longer than a month, personally.
But for another real question, should you be selling spawn if you have to ask this? If I was buying spawn I'd hope the person I bought it from didn't have to ask how to store it just a few days prior on a forum. But hey, business ambitions are admirable, so I'll give you that.

Yes, thanks for your advise. These answers help me a lot!
Most of the grain will be for myself. But yes, a part will be for selling. Once I have clean grain spawn, I have that product others want. I need to sell, in order to get the financial resources to purchase more grain spawn of other edible mushroom species for myself. It is key-important for me, that this passion can finance itself.
I can easily provide cleanness, as I have a glovebox (that I usually use for the propagation of my orchids) and know, how to work in a sterile environment. Just because of lack of experience, I had no knowledge at what point the spawn is ready, and how to store.
Besides, compliment to the good spirit here, and the speed of answering. :-)

What grain do you use for your grain spawns? Rye, or other grain types, too?

I do like oats the best, but I'll sometimes pick up wild bird seed if I can't get the oats for whatever reason. Nutritional variation is a good thing.

Would be easier to list what you can't use as spawn, honestly. Almost any seed or grain can be prepared SOMEHOW or other. Most flours work as well.
