Make your own dark chocolate 6

So, I'm a bit of a chocolate snob these days, and I have a hard time finding any that really does it for me.
Naturally, I decided to cut out the middle man and make my own dark ass chocolate
This is only my second batch, so I'm sure I'll make tweaks down the road, and maybe come back and change the ratios and stuff, but for now, it comes out pretty damn tasty.
It seriously takes like 20 minutes, and is pretty simple. The hardest part is finding ingredients, and clean up.
Here we go -
Crack a beer, and get all your ducks in a row.
You'll need - Cacao Butter cacao powder some kind of sweetener (local honey, agave, maple syrup) vanilla extract
Optional - cheese grater (makes the cacao butter melt faster when ground up) rubber spatula (highly recommended for getting all of it out of the pot) molds (if you're tryina get fancy and impress the bitches) hemp oil (cause it's heady and sounds cool) fancy foil (again, bitches . . )
Once you got all that stuff ready to go, let's get started.
- Measure out 100 grams of Cacao butter, and crush or grate it.

put it on a really low heat, and wait until it's all melted, stirring occasionally.
While we wait, lets prep the rest of our ingredients.
Use between 120-150ml of cacao powder, and about 10-20ml of sweetener if you like it really dark(I use farmers market honey ). add more to taste if it's too bitter. add about 10-15ml of vanilla extract. if you go on the heavy end with the cacao powder like I did, this recipe will make a real nice, slightly bitter, dark chocolate.

mix all this together and get stirring.

after about 5-10 minutes it should start to become uniform, and work any lumps out. kill the heat, and proceed to keep stirring until it cools down considerably. this is how it should look at this point

you can see a slight separation of color. keep stirring until all the chocolate is uniform in color and texture, and starts just subtly thicken.
If you're tryina impress the bitches, get a sweet ass mold. they're cheap on amazon, and look so much cooler. I used the edge of a cutting board to scrape the mold plate clean and make sure all the chocolate was in there.

You can just pour it on a slightly beveled plate too if you don't wanna go for the molds.
Cover in foil, and throw in the freezer for 15-30 min.
Pop those thangs out and enjoy!!
***I'm still pretty new to this, so if anyone reading is like a chocolate guru or something, please school me.

I saw the store-bought mushrooms in the first pic and thought you might have been making chocolate covered shrooms

So do you just put them straight into the mold without greasing it or anything? I want to try this but I'm not sure where to get coaco butter.

Did you ever get a chance to try out that brownie? I'm sure it didn't taste as good as your chocolate but I'm hoping it made up in other ways

you can get the butter online no doubt but woudl of thought most supermarkets will have it, or google chocoalte specialist stores in yur area, im gonna have to try this myself but as for your question im certain most chocolate will pop out of moulds, and think when was the last time you had any chocolate slightly covered in oil to help it out

I found it at my local hippie health food store, but you can find it online too. the cacao powder I had to go online for. yeah, no grease the plastic is smooth enough that it doesn't stick.Quote:

Have you considered remelting and tempering the chocolates? They will have a nice glossy shine, melt at a higher temp, and the cocoa butter won't separate and blossom if stored for a long time.
Adding a very small amount of wax will also help them hold their shape and melt at a higher temp.
They look good though, and you make it look easy to make from scratch! Makes me want to make truffles haha

ooo truffles are fun! and fudge too if you dont crystalize it but tastes good whatever, not made either for a loooong time proberly since i was a kid as i was always baking
muffins and choc chip cookies was my last venture but i found my self over the last few batches not baking the whole lot and keeping a log of dough in the fridge and cutting of a few so i always have a fresh baked cookie in 10 mins

Yeah I've been looking into tempering, and will probably try it out soon. for the most part, im really pleased at how even the chocolate came out without it though.
thanks for the wax idea though, I was thinking I should stabilize it so I can take it out with me without worrying about meltage.
