Starting over with dryer WBS, but PC made them More Wet/Sticky??????

I'll try and make this short:
6 hour soak. 20-30 min. simmer while I watched the grain until 5% burst. Dried on 3 separate towels to give the 20lb of WBS more room to dry.
The grain was very hydrated and swollen from absorbing water mostly from the simmer, which I thought was a good thing.
I was sure to dry my WBS over 4 hours with fans to make sure that they were 100% dry to the touch. I did the toilet paper test, etc...
THEN, after a solid 120 min in my massive PC that holds 10 quart jars at at time, the jars come out looking like the last 2 pictures below. I will keep shaking the jars until the water is better distributed, but what did I do wrong or not do at all?
My last grow was a complete fail due to contams, which were mostly bacteria, which I've had ample experience with. I'm really trying to do everything on the dry side to promote good, healthy mycelial growth. I haven't PC'd the next 15 jars, so I'm asking if I should dry them out even more.
First pics are of the bowl that sat out overnight before I PC'd. All of the grains looks somewhat depleted of water.

Here is a pic of the grain in the jar before I PC'd it and turned upside down without shaking it at all.

Lastly here is what the grain looks like in the jars AFTER a 2 HOUR PC and I turned the jar upside down without shaking it at all.

What kind of lids are you using? Filters? Foil or no foil on lids?

The lids are the standard that come with the jars. I use foil and my lids are on tight with poly fill, which is also stuffed fairly snug inside the GE hole.

That makes sense. I've been obsessing over moisture content due to my recent bacteria issues.
Do the seeds look like they're the right amount of moisture? Like I said I've had issues with bacteria and my spawn being too wet in just my last grow.
Maybe you could help me with figuring out why they got bacteria... I only PC'd for 90 min as I've done for a long time, but just recently heard 120 would be better if bacteria problems exist. The grain was dry to the touch and even rolled right off of my hand when I picked them up. All of the jars had these little spots on the grain that didn't colonize and when I shook them to see if they would recover, I noticed those little spots spread to even more grain and the jars smelled bad. I threw out over 20 jars that I just said fuck it and opened them to smell, and they were all sweet, nasty, anything but that good mushroom smell.
Thoughts? Here's my last jars w/ bacteria:

I'm a total noob at WBS as well and I've had the same problems you've experienced. I have followed Frank's method of a 24 hour soak with weak coffee, then a quick simmer before drying.
My jars have came out with too much moisture even after I thought the seed had dried properly for a few hours. Some of my jars did come out pretty good with no signs of bacteria, but once I spawned it to substrate in my tub, I got the green.
For my next time, I will try the soak without the coffee. That could be the problem. I will also take extra precaution with making sure the seed is dried before loading into the jars. I use SFD lids with the silicon for injection. I use MS from vendors... but I've never experienced bacteria with my cakes, so I assume the syringes are clean.
I will definitely follow this thread to improve my grow as well. Maybe my experience can help someone else

Wanted to chime in that when I got tired of rinsing my wbs and still having it be sticky I simply switched grain to a more clean grain. Took less time, money and water. Don't even rinse now.
