Open Grow Bag Or Give It Some More Time? [pics]

I'm still getting started with mushroom cultivation. Before I invest in a pressure cooker for preparing my own substrate I've been determined to get a small successful grow on pre-made substrate. So far I suck; Inoculation goes just fine, but come fruiting time I've managed to dry out the surviving jars in a BRF cake batch in one of those fancy automated grow kits with the air pump and everything. Then I tried bagged BRF, eventually cut the tops off for air and ditched the pump for fanning/misting. Somehow ended up with a little green mold in the underside of the bags.
This time I decided to try a pair of larger bags with a mixture of grain, straw and poo and supposedly designed so that it's possible to do everything in the bag. While that's been growing I've also purchased a new tub and a big bag of perlite to make a better fruiting chamber, watched through a video tek series. Two days ago I started another dozen jars so I could follow the video more carefully.

In the meantime my grow bags seem to be slowing down in growth, it's been about 4 weeks since inoculation and there's a layer of what looks like foam over the top of one bag and pockets of yellow liquid on the side which should indicate bacteria. It might be a bad idea to jump the gun and expose these lumps of substrate to open air if they're fighting infection, but it might also be a bad idea leaving them be if they can't breathe.
Should I give these like another week or so in the bag, cut the tops and fan/mist which is how I ended up with mold last time around or take my soon to be FC, drill a bunch of holes and fill it with damp perlite a little early so I can put the lumps in there?

Any help is much appreciated! I'll also post updates as this goes along.

Can you get better pictures? of the substrate.
Metabolites (yellow liquid) is not always an indication of contamination. metabolites are released during digestion of the substrate.
As for how far along, well it LOOKS like the sub is ready for FAE (fresh air exchange) and misting and fanning but i cannot tell with out better pictures

The inner sides of the bag were too dirty to get a clear shot from the outside. Here's an inside shot of the one with the foamy looking top. I had my flash on by accident the first time so it was hard to see the substrate with all the bright drops of water.

Don't mind the discoloration, the surface is perfectly white, I just have really bad lighting.

Ya sure metabolites are not always bad, but that right there is straight up bacteria. That is not even metabolites, it's a heaping pool of bacterial colonization.
I would throw those into a contam pile, or if you are really desperate, take the blocks out of the bag and rinse them lightly under some running water and try to fruit them in your sgfc. But I would personally throw that crap away and start fresh

I have nothing else growing right now, so I decided it wouldn't hurt to fill up the FC and see these guys through to the end. After rinsing them both I discovered that the little pool shown in one of them is actually a sort of slimy yellow film. I'm really hoping it makes a recovery, but it feels like bad news =(.
Most of my reading is from forum searches, haven't really figured out which book would be best to buy, but while waiting for these results to come in something to read wouldn't hurt.

This forum is a plethora of information...from the dark days of complete darkness for colonization all the way up until right right now in cultivation... don't trip on buying a book...the info on this site alone trumps any single book.

Agreed, there's so many good ideas and Teks that I'm sure to find a method that works for me. What I would get is something with brief details for as many species and strains as possible. The stuff like ideal temperatures, humidity levels and the quirky ones that grow looking like contams.
Hopefully these guys are still alive, I won't have access to tend to them for the weekend, so I'll probably spray them a little extra before heading out.

The one in the back is the one that had a little bit of foam on it and the one in front is where that yellow spot was originally. It seems to be whitening up. The first few times I sprayed them the liquid running on the foil would be yellow, but it's clear today. What the tops look like to me is like sprinkled nutmeg. Fingers crossed that something good happens soon.
