When cakes flush at different rates, how to let harvested cakes rest

All apologies if this is a repeat post. I did my best, but couldn't find this specific question in the relevant threads.
Two cakes in my SGFC have flushed and the rest are well on their way. I want to let my cakes rest before a dunk, but I just don't know what to do with these early birds. I have set them away from the rest to best avoid misting them, but I'm not sure if this is sufficient. I'm sure they still receive a little mist, and of course the humidity in my FC is tailored for fruiting, not substrate drying.
I considered removing them when I mist. I figure that a few minutes in very dry (high altitude) air could compensate for the rest of the time spent in high humidity. I also considered putting some perlite in tupperware and leaving it with the lid cracked.
So what's the verdict? Are cakes that are still in fruiting conditions sans misting truly "resting"?

just leave them where they are and mist as normal, if they pin again give them a dunk

They still have pins on them but I don't know if they are aborts yet. If I treat the cakes like normal, won't I be telling it to grow those pins even if the mycelium isn't ready?

if it's ready they will pin or the pins will grow, the method of letting the sub dry up a bit before dunking is not really needed with cubes anyway

Oh yeah? I didn't realize this.
So my pin set should be the same whether I let it pin before dunk or after? Also, my cakes that flushed have some blueing, but this is only the first flush. Did they maybe get too dry or something?

yes your pinset will be the same, they need the water to suppport them though, bluing is fine and expected!

Cool. Thanks for your help. I've got one more question for the road, though - a fruit from a substrate without enough water will look normal but really small, right? Because I keep ending up with one or two mushrooms that are clearly the largest followed by several smaller ones. I just realized I may be misting too little/fanning too much and drying my cakes, and only the first pins can actually get big.
Does this make sense, or is it genetics or something?
