HELP with bulk substrate

I'll start by saying what I have:
two 45 qt clear tubs/totes/bins 2 bricks of coco coir 1 bag of gypsum Dehydrated cow manure (2-1-2) Coarse Verm Straw and 5 pints of fully colonized cubes (B+)
I want to make the best shrooms I possibly can with the monotubs I'm making. It's so confusing when trying to figure out what ratios I should put in the bucket to pasteurize. What amounts of each ingredient should I put in my buckets? Do I need hydrated lime to balance out the pH? And would coffee benefit..? Anything else that would benefit...? Thanks.

5 pints of spawn isn't enough for even 1 tub.
if it's too confusing then go with something more simple. it's literally hydrating ingredients, and mixing them. you have to pasteurize your substrate. if monotubs are not making sense do some PF cakes until you understand all the terms and such.
it's hard not to find monotub info you're on the shroomery. monotubs are to the shroomery as books are to a library.

You could do a mini mono or smaller trays but not a tub with that amount of spawn, like bod said.
Id suggest 4-5 quarts per tub.
You are saying bucket for pasteurization, if you mean bucket tek that is only suitable for coir/verm substrAtes. If you add straw, coffee, manure etc you will have to properly pasturize it between 140-170 for 1 hour.
Maybe just start out with coir sub. 1 brick coir, 2 - 3 quarts verm, hand full gypsum. 3.5-4 quarts boiling water in bucket.
Get a smaller tub for mini mono or tray to spawn to bulk in

Frank's 12 steps to shrooms (a mono tek for beginners)
Monotubs/Grain spawn How to get started
1. Make grain spawn WBS is used in the TEK(I use rye) Frank's WBS Prep (perfect every time)
or use oats 2. If you want to expand your grain jars without individual inoculation use G2G transfers Grain to grain in a SAB Also TL's take on G2G with video
3. Now you should have colonized grain spawn, time to make a bulk substrate to spawn to. Frank's Simple Coir/Verm Tek I personally use coir Frank's hpoo substrate, revisited poo works too
4. That substrate has to be pasteurized, here's some info to clear up any confusion about pasteurization Frank's Proper Pasteurization Tek 3.0
5. Ok you have spawn and bulk substrate, time to mix them Frank's Bulk Spawning Tek (in a monotub)

OP i would worry more about fruiting conditions and reading up on fungal biology. You could use a simple CVG with a 1:1 spawn ratio in a mini-mono and get better results by keeping it simple until you have more experience rather than going all-out and messing up. 
A properly run yet simple setup is better than a finicky but more advanced setup.
