Like I said, with the lions mane you have to know what your doing. Its also important to make sure that you dry it out a tad bit before you go sautéing. They have a lot of water in them and if you just fry em up without regard they will have a strong mushroom flavor. I like to harvest mine and wrap them in a paper towel, then stick them in the fridge in a shoebox for a day to get them right where I like them. Otherwise you could just throw them on a dry pan until the water boils out, then add butter/oil after they have dried a bit.
A lot of people drop the humidity in their grow room/chamber for a day prior to harvesting to produce the same effect. This also increases their shelf lives, which are pretty brief.

Yeah. I've read all that. Mine grew outside in open air. Just blocks on a shelf with no tent over them. So they were probably about as dry as you want when harvested. I will try them again, this fall. My grandmother has alzheimer's/dementia so she was my main driving factor behind growing lions mane since it has "nerve growth factor" in it. Shitty thing is I can't just grind them up and make pills for her to take. Because she doesn't think she has any problem and won't take her medicines. So a pill just won't work.

Make a tincture out of them and sneak it in her vegetable juice or food. The tinctures allow more of the medicinals to assimilate into the body as well.

I always liked pheasant back aka dryads saddle. https://en.wikipedia.org/wiki/Polyporus_squamosus
always find them when I morel hunt. never heard anyone growing them or seen cultures for sale.
they grow on wood so they shouldn't be that hard to grow from a wild

I disliked the polyporus squamosus I had earlier this year. I suppose everybody's tastes are different but there are many more preferable edibles in my opinion.
