What are Some of The Best Tasting Gourmet Mushrooms?

I haven't grown psilocybin mushrooms in years. I miss growing, but I don't want to grow anything illegal anymore. That's why I want to grow gourmet/edible mushrooms. Any recommendations? Preferably ones that taste the best, because I will be using these for culinary purposes.

Of course any answer would be opinion but so far, King Oyster and Shiitake are my favorites. However, I haven't tried very many different species.

I tried King Oyster and hated it.  Maybe I didn't cook it long enough but it was very chewy for me. 

I heard Lion's Mane is the best tasting of all (lobster taste), then your blue oyster...

I can't wait to get a lion mane culture so I give that a go.

King oysters are pretty delicious in my opinion. Particularly the caps. The stems can be a bit tougher but I wouldn't call them chewy, just a little more snappy, while the caps are super tender. I prefer lions mane over king oysters but you have to know what you're doing when you cook them. Some of my lions manes turned out pretty bad. You can't go wrong with shiitake or maitake. And of course morels are the holy grail but you'd be better off doing those outside. Ive never been a fan of regular oysters and I haven't tried any of the less common pleurotus species.

My favorite mushrooms so far have been:
1 wild morels
2 chicken of the woods
3 lions mane.

Morels are my favorite, they are amazing when fried.

I found some nice size lions mane and grilled them. They have a very nice taste (not all that
lobstery though). Only problem was the texture was rubbery and they were super moist.

My personal favorite aside from morels have been oysters, they taste amazing when added
to dishes like fettucini alfredo or used to make omelets :crazy2:

2. Yellow Chanterelles
3. Wild Oysters
4. Turkey Tail
5. Shaggy Mane
6. Giant Puffball

5 & 6 are kinda tied.

I like the bland almost woody taste, I enjoy chewing on them as i hike around in the woods, its kinda like a mushroom gum almost.

Yeah! Sometimes while hunting (not that often unfortunately) I will pick some turkey tail and some chaga and make myself a nice tea to travel with.

I was totally gonna throw Macrolepiota Procera on my list as number 4, but I don't know of anyone who sells spawn or has any cultured, but you could grow them outdoors if you could get your hands on a wild one and clone it.

I've grown and eaten Shiitake, King Oyster, Blue\gold\pearl oysters, Lions Mane, ABM, black poplar and a few others that are slipping my mind at the moment.

Lions Mane has been the most disappointing, by far. I was so stoked when I got a culture and I immediately started growing it. C'mon, a mushroom that tastes like lobster? I'm in!! But, that was simply not the case. Absolutely no lobster-like taste. I feel like whoever says that it does is some asshole vegan who's never actually had lobster. The flesh sorta tears a bit like lobster meat, but that's about it. I had a group over to try it when I grew some beautiful pom poms outside after only getting funky growth indoors. I can't say anyone really liked it. Cooked it up a few different ways, still no one was really impressed.

Kings have been getting outstanding reviews from my grows. Deep fried kings are simply off the charts. After you have them the common fried button mushroom just doesn't compare. Everyone seems to like shiitake and the other oyster varieties as well as the black poplar. However, I think ABM may be the new favorite fungi. ABM is fucking delicious! It's a bit tricky, and the shelf life isn't anywhere near the Kings, neither is the yield. But, dammit are they sooo tasty! Just cut em up a little and fry em in a pan with butter, a little olive oil and a touch of garlic and salt.

I absolutely love lions mane. It is up there on my list of favorites. I usually sautee it in a bit of olive oil until the edges start to brown. Deglaze with sake, rice wine or white wine. Remove from pan and top with a bit of butter. Then I add oyster sauce to the pan to make a wine/sake and oyster sauce reduction. Spruce it up with a bit of thai basil.

blazei are also far and away my favorite cultivated mushroom.

black trumpets may be my favorite wild fungus.  perhaps matsutake.  never tried lobster mushroom though.
