Stacking in a pressure cooker
    #2227182 - 01/07/04 06:56 PM (12 years, 10 months ago)

I am going to try and do the pf tek for dummies in the next couple days. I just bought a 8 quart pressure cooker from Walmart. I am wondering if I can double stack the half pint jars in the cooker? I can only fit 5 half pint jars with one layer but 10 if I stack them on top of eachother. I read I need to put about 1 inch of water in and run the cooker for 1 hour at 15 psi? I have a 20 cc syringe and wanted to know if I can use 2cc per jar as I want to use the whole syringe (20 cc)? Thanks

yes to all of your Q's
remember to have a rack or towel in the bottom of the pc so that the jars are raised off the bottom.

It helps to prevent the displacement of water from the bottom of the jars. Excessive heat will cause the lower portions of jars to dry, and this will cause issues with the growth of mycelium through these effected portions of substrate.

To answer your question everything is capable of "burning." That is to say that excessive heat will cause chemical changes ultimately leading to changes in physical characteristics.

This is all another reason to use the lowest stove setting that will keep the water boiling. Bring it to a fast boil on high first, then turn it down as much as you can before putting in your jars.

Good luck, and respect that which you seek.

Oh, and a towel is better than a rack because it takes up less space. I guess if you happened to have extra room in your PC there wouldn't be a diff, but I think most people cram their PCs are full as they can. ; )
