harvest them one by one, leaving the unmature ones to finish.

That's what I do 
The actives in the mushroom stop being produced when the cap starts opening up, so that would just be extra water weight. Do what Munch and sweetpea suggested before OP, pick them individually at the right time.

make some prints they will also still grow some if you pick them now and not immediately pop them in the dehydrator haha seen it happen several times

Now the ones in this pic might be a different story. They are at least 48 hours past their prime. The mushrooms are rotting and I would imagine losing potency. But who knows for sure?
-------------------- Stop experimenting half way through your first grow. Grow it to maturity, watch it, learn from it. Do this a few times then experiment with different ideas and figure out what works best for you.

It's all hear-say TBH. Finding concrete evidence about when the actives actually STOP being produced is proving to be very difficult.

I agree that they taste much better before they are full of spores. It's the same with button versus Portobello. Which makes me wonder if that is where the rumor that they get weak with age has mutated. I bet that somewhere people figured that cubes should be picked before the veil breaks. Just like button mushrooms. It's not as potency thing but a taste thing. But it's mutated over to this whole 'they are stronger before the veil breaks' rumor. Just a thought. As for the tub of rotten mushrooms, they are in my compost pile. I dried a few handfuls just to see but they are garbage. Trash day is in a few days if you want to scrounge in my trash can.

Those fruits were only 2 days past prime?! I've had to leave a tub that was less than a day from harvest for around 4 days due to an emergency. The mushrooms were fine when I got back, although some were covered in spores. They were pretty huge however!
They were pretty weak though, that whole batch was weak. It was on the third flush.
