I have one mushroom that is done but the others are gonna need a few more days. Do I wait till all mature or do I just do it one by one? Ill be using a dehydrator set at the lowest setting.

Dehydrate them as they mature.
If they arent mature (torn veils) don't cut them to dehydrate.

From what I've read, heat doesn't actually kill the psilocybin... it just speeds up the oxidation process.

You shouldn't need to worry about temperature - people make mushroom tea, and that doesn't have an issue with potency. Use a fan without heat if you are worried.
I use my dehydrator at the lowest setting (85F) for about 24 hours, then dry them completely by putting in a desiccant chamber. Works fine with no loss in potency that I can discern.
Some people split the stem to speed the process, if the mushrooms are quite large. I don't.

I just pile them up in my fridge for a few days, then dry them all in one batch. I try to get it done within a week or less.
Temp should be no issue.
--------------------
I spawned some popcorn casings and had double-overlay cause I didn't put enough hydrogen peroxide in my automated aquarium mister. I only got one mushroom so I cut off the head part where the seeds fall from and put it in a jar of LC and sprayed it all over a tin of PF cakes I made with gravel, cardboard, and bisquick in my microwave. I think it will be good cause B+ is so potent. Triggered yet? Only a square would say "a cube is a cube."
No, this does not look right...

...Or you could just turn up the heat on your dehydrator and have them cracker dry in 12 hours or less. As you stated above, heat does not affect potency.
