I remember it as being the "stain" spelling. It was memorable to me that they spelled it in a way that seemed incorrect. I think people's memories just edit it to be the more sensible "stein" spelling, because it's so stupid that it's spelled "stain."

That's exactly why I remembered it, too. I can recall telling my mom that there was a spelling error in my book and having her tell me that's just how they spell their name.

Honestly, am not even certain myself or my mother "remember" the spelling from back then at all. Think that the natural predilection is to spell it as "stein" when asked simply because that seems the most likely spelling when put on the spot. 
Did however find the link that replaced the Mandala Theory on wiki to be interesting though -- it mentions that memory issues of this sort may show up in people who have suffered an aneurysm. As my mother suffered one a little over a decade ago, it is knowledge that may alert me to quirks aside from possibilities of Alzheimer's. Initially came to this thread for the fun of it, walked away far later with a worthwhile insight.
