Why Are My Cakes Dry?

I have some F+ cakes in my fruiting chamber.  I've been misting and fanning 3 times a day.  When I got home from work, I touched my cakes and they were bone dry.  I guess I sort of freaked out and misted the shit out of them just now.  I believe I overdid the misting because now there's some blueing on the cakes.

I did have issues getting the verm to stick to the cakes after the dunk, so there are bald spots.

1.  Are they drying out because of the bald spots?

2.  Can they be re-dunked and re-vermed, and will that help?

Here's some pics of the set up.  There are the proper size holes every two inches on all the sides, the top, and the bottom...exactly as described in the "Let's Grow Mushrooms" video.



The one cake is fruiting very slowly, but it was starting to fruit in the jar.

About 5.  I used 2 bags of perlite.  Rinsed out all the dust, then drained well.

Could be how hard you fan them. Try fanning them a little easier and see if that helps. Or give it a few days and wait to see if anything happens if not, I would re dunk them.

Be sure to let them soak in the cold water for up to 24 hours. I like to do at least 18.

I think you will be ok... Blue-ing can be from handling them or they might be drying out...
Try carefully putting some Vermiculite on the tops of them, but don't overdo it...that gives them a little extra place to store moisture.
Make sure you are misting first then fanning (this causes evaporation, which helps the cake to pin) Fan gently...When you mist use a bottle that produces a fine mist (I use a little dollar travel spray bottle... It puts out a super fine mist)

Thank you both for your input! 

I was fanning like I was going for an olympic medal, so I'll tone that down.

I'll also try to put a small bit of verm on top when I get home tonight.

I did a close up visual inspection of the cakes and they all seem to look spiky, so that's a good sign, I think.  I think it's primordia, so that means pins should be coming shortly!

Do you have a fan running in the room? PF cakes especially rolled shouldn't dry out in a spec'd SGFC. Was the verm dried up and falling off the sides?

A PF cake has like 6mL (1/2 a spore syringe) of water when they're mixed, its easy to think you don't have enough.

The more you mess with them the longer its going to take to get fruits, trying to do too much could stall them also.

No fan.  There is an air conditioning vent, but I closed it and put a t-shirt over it thinking that if any air got out, the shirt would act like a diffuser so the air wouldn't blow directly on the cakes.

I think you're right in suggesting I was overthinking it with the moisture.  I used to grow outdoors only and I remember how plentiful the shrooms were after every rainstorm.  Maybe that's what messed me up and freaked me out.
