My cakes just started pinning and they have grey caps that look like theyre cracking. Whats wrong with them? I keep my humidity at 90 to 100 and my temp at 78

Lower the temp a bit. Pics help. When pins first start to appear I think they look a little gray from the mycelium on the caps

universal veil my friend,
mist less volume(when you're misting) and less often.
I often wouldn't mist a cake until it pinned. After you dunk a cake it has enough moisture to put out a pinset. give it water after the pinset develops. don't even mist until you see pins. patience and neglect are key. only once you get a feel for things can you give them constant attention without fucking it up.

I thought the whole point of misting and fanning was to cause evaporation to induce pinning, and that it is actually the perlite that keeps the cakes hydrated?
And that fuzzy myc all over was more likely due to lack of FAE? (Which is likely since those appear to be in a PMP)?

it really depends, you have to get a feel for it, but if you don't know what you're doing it's better to under mist than over mist by far. if you neglect your cakes until a pinset you'll be fine, especially if you did the dunk and roll and got a good nice coat of verm on the cake, and the cake is healthy. if you don't over do it and mist right away after putting in the SGFC and give attention you'll be fine. if you over do it and drench the cakes then you'll be worse off

My humidity goes down too fast even with the perlite, can I put a folded soaking wet rag in the sgfc if it doesnt touch the cakes?

don't measure your humidity it should dip lower than 50% regularly anyway. and fluctuate pretty dramatically through the day.
