What do I do now? Cased for a week, help with initiate fruit/pins.

I have cased 100% colonized Florida Treasure Coast popcorn with cow manure, straw, gypsum, and peat moss to do a bulk casing(all pasteurized). After a week of recolonizing the casing I started to notice the mycelium was breaking the surface so I kept patching it with peat moss. Yesterday or the day before that I transferred them to this fruiting chamber. The mycelium will soon overtake the casings so I was wondering other than misting and FAE if there is anything I can do to help initiate pinning.
 More photos coming tomorrow.

im not quite sure what TEK or procedure u were following….u got some dried peat or manure on top maybe?? get that dried spot towards bottom of tray moist.
not sure if u did this…but next time, u EVENLY mix ur "popcorn" spawn with your pasteurized substrate (cow manure/straw) in the tray. cover it up with foil, no holes. in a week or so, it will be all white. at that point, case it with pasteurized peat, recover it for 2-3 days, and fruit.
u don't want uncolonized manure and straw sticking out all crazy like that in fruiting homie

See I did that but I covered it with the plastic covers for that came with the tray but I also poked holes in the cover because I was under the impression it should breath a little. It's probably the over head angle of the tray but the straw isn't sticking out, it is flat.

i like foil because i can tuck it under rim of tray, and breathes perfect w/o holes.
i never used plastic, but i guess what u did was ok??
just make sure nothing dries out too much. u just gotta wait now.

don't worry about temp drop, just try to keep ur room no more than 80f.
also, make sure that perlite has holes beneath it.
www.mushroomvideos.com BRF/PF TEK parts 1-4<----watch them if u have not. use the exact chamber design as him, but size of tote doesn't matter.

Preesh, water droplets have accumulated on my casing. And I think next time I do need to make my casing more level as you say. What should I do about these droplets?

Looks fine to me , you want water droplets, they evaporate slowly and get replaced. This tells the mushrooms that evaporation is occuring, they've hit the fresh air, now it's time to fruit

nothing. just leave it alone till it fruits. fan and mist as needed. the water droplets are a good indication that the microclimate is suitable for pinning
