Same here, I love making my own pasta whenever I have the time. It's just a pain in the ass because it takes so much time, with the rolling and kneading the dough, rolling it super thin, slicing it with a knife, hanging the pasta on a wire rack to dry, etc… but soooooo much better and chewier than store-bought pasta when you're finally finished.
you seem to be making it more work than it really is. I never dry my pasta

Also, why flour in the freezer? I wasn't aware that flour ever goes bad. I thought you could just store it in the cabinet or pantry or whatever.
weevils
I go through flour fast enough that I dont have to worry about it but it's just like with rice or any other grain, there's always weevil eggs present and they will hatch and breed

really? 1 egg to 1 cup of flour, a pinch of salt... there's nothing to making pasta, certainly no need for a whole fucking article

Really? You never hang it on a wire rack like this? I always thought that was essential to making pasta, especially spaghetti or linguine. I don't dry it if I'm making something like ravioli obviously.

This must be a regional thing. I have never seen weevils in California, the first time I ever saw them was in a bag of rice when I was living in Philadelphia.

ive never done this, but whats the point of drying it if its going to be consumed quickly?
for storage i can understand, but for same day consumtion, i think that step is skippable (in the theory that i have stuck in my head)

nope. I dont dry my pasta, doesnt matter the type, if you used egg in the recipe the egg will cook and keep shit together, cook time is about 2-3 minutes depending on the thickness
as for the weevils, they're worldwide, you probably havent heard of them because people sift them out or cook them into what ever you're eating and they never mention it.... or they've gone through the flour fast and it was never noticed

Pretty much what pris said. We have had a huge problem with them a few years ago. I mean we ended up with hundreds or thousands of weevil moths flying around. We searched everywhere and could NOT find where they were coming from. We started keeping everything in the fridge/freezer that they would eat, set up pheromone traps and got hundreds of them and they still weren't disappearing. Eventually we found a giant can of oatmeal that someone (assuming one of my grandparents) had stuffed somewhere no one would look.
But flour can also go rancid. I dunno how long that takes, because I've never had it happen (and I've had flour last a long ass time) but it's a possibility nonetheless.
I still keep most of my flours and stuff in the fridge/freezer because stuff like my pasta or bread flour does not get used regularly.

Weevils are a huge nuisance, getting in the cereal & sugar & flour & whatnot..
You guys that make your own pasta..
I'm not big on spaghetti, I'd make it sometimes, but I'd definitely bootleg some chicken spaghetti.
