alternative drying methods

any way besides a dehydrator that may dry mushrooms in a way to preserve it better. I often find that dehydrators dry too hard and i dont like dry, chip-like shrooms. Ive left shrooms on the dry rack before and found when they slowly dry, they dry but are no hard and chip-like.. they are more soft and flexible and im sure it preserves better like that with lesser deduction to quality. I was thinking maybe over epson salt or something? im sure this has been asked over and over, but just wanted opinions

I air dry mine for a day, then I finish them off by freeze drying them. Once they're done freeze drying, I store them in a container in the freezer with a desiccant package from my heartburn medicine.

On the contrary, if the water content is high enough that they're soft and flexible it's high enough that they're at risk for mold growth. They should be cracker dry. Meaning you can easily crumble them into powder with your fingers. There are alternative methods of drying but none of them when done properly will result in soft mushrooms.

I let them air dry for a day or so to get the surface moisture off (or at least most of it). Then I put them on a pan and pop them in the freezer for a few days on its coldest setting. If I have larger fruits, it might take more than a week for them to dry this way.
