Why does it matter if casing dries up during fruiting since the fruits get their water from the substrate? Why is the need to hand water with a syringe there? I understand knot formation needs water but after that why does it matter if casing dries up a bit?

One of the guru's can fill this in. But my understanding is that pans like it wet, not much more than that. The hand watering is to avoid getting the caps wet and then having them dry out. iirc the fruit are ok to be wet through moisture in the air, but best to limit misting them so they don't dry out.

Mushrooms lack skin and when forming knots they need the humidity provided by the microclimate from the properly hydrated casing. You won’t see a second flush if all the pin site locations are dry as a bone.

Yes I know knot formation need ideal water content at the surface level, but I am talking about pins, when they pin they use up the moisture content of the sub, why must the casing be wet during the intermediate pins phase?
Cronicr said they use the evaporation to keep themselves humid but in a setup like JCM's and Jarthas this happens automatically through the environmental setup of the water.

the fruiting chamber needs to be humid for the mushrooms to not dry up, the surface needs to be humid for the micro climate, the substrate needs to be wet to draw moisture from

if it needs water then water it lol, we cant set everything in stone so all we can do is give you optimal condition requirements but its up to you to reach them, teks are great guidelines and if followed to a T they will work in your favor

The short of it is that you really will need to fuck up a bunch of grows (maybe) It's like telling someone how to ride a bicycle. You will need practice to develop the skill. I don't think there's any way around that.
