I shut the stove off after that 20 degree raise but it still climbs to that 160 range. So I’m scared if I shut it off at 120 (when the mechanical thermometer registers) then I’ll go over that prime temp range
Depends on the thermometer mine reads 0°F-220°F. I also put on a cotton glove and then a nitrile glove(its hot and moist lol) and mix the outer parts of the bag(the hot part) with the cooler core several times until it reaches temp. Not sure if it is actually beneficial just the idea of my sub partially sterilizing where it touches the bag kinda freaks me out lol

I think as long as it has a keep warm function it should work. You're not actually needing the rapid high heat the rice cooker uses just the temp used to store hot food safely which is 140-170 by food safety standards. The slow cooker also has ceramic walls which should evenly disperse heat pretty well.

I thought I read of slow cookers not working in the past but I’m going to give it a try with some left over coir just to test it out. I’ve tried finding metal thermometers that read at zero but haven’t seen any locally. I’ll check again because I’m done with these digital ones.

They do not work for agar which is what I got it for initially. Great for pasteurizing casing though.

Im also gonna give it a shot. Probably fill it with water first and see what temp it holds. Like I said in theory it should work but there could be something else about them I didn't consider. I found mine at wallyworld. They still had them stocked last time I was there. Hopefully there's one close to you that carry it. Tweeq I'm about to check that out. Always down to learn a better way

The reason I like that container is because jars and bags will float around, you'd have to weigh them down in any old pot. But that container with the lid perfectly closes down on 5 quart jars and pins them in. I also fill a half pint with water and put it in there to snug everything up.
AND.. sous vide cooks a killer steak.

From an uneducated quick read of a sous vide it sounds kinda badass. Edit: ok I see what they do. Pretty cool.

So do you just set the temp of the water it’s sitting in?

Yes I pack qt jars as tight as I can with sub or casing, set the temp to 160f and timer for 3 hours to make sure I get core temp. Mine doesn't shut off when the timer is done though it just has an audible alarm so I have another timer that kills the power when I want so I can go to work or whatever. The sous vide timer starts when it hits your desired temp.
They're probably all like that so when you're cooking food it doesn't get to room temp eventually.

Oh I mean if it's already solidified the sous vide won't get it going. You'll have to microwave. If you are taking it from the PC, it works great to keep at temp.

Yes that's what I meant to say. We alsp use it for pasteurizing coir based substrate and it's worked great
