The Pans I just posted were anywhere from 62 to 78F... 72F is pretty solid IMO, but I've never worked with bisporus. 
I mention this because I had the same perception/expectation with pan cyan "needing" higher temps... totally not so in my very limited experience. And, honestly, I think they came out pretty firm/dense thanks to the "colder" temps. Still thin and more fragile than cubes, for sure, but not quite what I expected.

These tropicals we're fruited at 82 Fahrenheit
