Songs with ridiculous jams and transitions are my fave, particularly with acid. If I'm tripping on mushrooms I like to listen to more gentler music and Pink Floyd is usually a go to for mushrooms. I had listened to the String Cheese Incident for a couple of years here and there and thought they were pretty neat but never thought about them as being amazing. When I saw them live at Hulaween last year, trippin my wang off on a heavy dose of L I immediately understood the massive following and uptalk I had heard about them at the festival. It was so mind blowing for me as they had no identifiable genre, it was just pure happy music spreading across multiple types of music. I was never able to see the Grateful Dead as I'm a millennial but I imagine the experience was the same for a lot of people and that's one of the reasons I love and respect the Grateful Dead so much.
But, if you're trippin on acid anytime soon then I'd highly suggest listening to this song. I wouldn't say this is their best performance of it but they get pretty fucking wild with their jam in the middle. Kyle Hollingsworth goes fucking nuts on the keys. I haven't done acid to it yet but was listening to his while on some ketamine not too long ago and although I had heard it numerous times it was hitting me so much harder.
The String Cheese Incident - Rhythm of the Road
As I was saying before, Pink Floyd is a go to for me and mushrooms and specifically the shit with a lot of old sounding psychedelic ambience is the best. The Atom Heart Mother Suite made me feel like I was being lullabied in a cradle throughout the cosmos. There is some chanting in the middle of the suite which I had forgot about when I was listening to it and it took me by so much of a surprise that I started giggling my balls off. It's long but it's a good listen for when you have the time.

In terms of complex rhythm changes and ridiculous displays of musicianship, it would be pretty hard to top this. I wouldn't be surprised if Micheal Giles' drum kit spontaneously combusted halfway through this and he just kept on playing.
Ditto for this. I don't know how it's humanly possible for a whole band to shred on jazz rhythms perfectly synchronized, but it involved a lot of acid.
