Best way to pick fruits that won't harm the substrate below?

I've been told to just cut at the base of the stem with a sterilized razor blade. Since it can be hard to do so in the tub, is it best to lift the substrate in the liner out of the tub for harvest like Frank does here?

I just find that picking them with my hands tends to really tear up the substrate beneath, no matter how careful I am.

Is why you save some caseing or spawn substrate to patch when your done picking.

Contemplating the whole "chosen people" thing with just a flaming stealth banana split the sky like one would hope but never really expect to see in a place like this. Cutting right angle donuts on a dime and stopping right at my Birkenstocks, and me yelping... Holy fucking shit!

Yes lifting the substrate out is easiest. you can pinch and twist at the base or cut with a blade as you described.

I like to just use my scalpel to harvest for the easy maneuverability

If I'm planning for 2nd flush I cut at the base.
If not, I twist and pull.
It also largely depends on how the fruits are connected to the sub. Sometimes they pop right off without leaving a dent, in which instance cutting would be pointless. You'll learn which method is best with time.
