Shiitake question

Have two 100% colonized bags. One is climbed the walls of the bag.

To start the Browning process do I need to put them into a fridge or burp the bags?

How long have the bags been colonizing and what's your substrate? This should take place automatically.

I'm using 40 LB bags of hardwood fuel pellets from Walmart and substituted wheat bran with with brown rice. No other additives.

Followed this tek. Thinking about adding some gyp next time.

I'm in the process of my first shitake run and I'm pretty sure it's going to take two or three months before they are ready to fruit, I plan on letting them go for three months total. There are other methods out there that can speed the process up but I'm in no rush and from what I've read, prolonged colonization times typically result in better fruiting performance.
