8 days in the greenhouse and still no pinning

Alright so I'm using the v tek and everything seems fine except none of my containers are pinning
I don't know how long it's supposed to take but Roger rabbit in his brf video had fully grown oysters 4 days after fruiting conditions.

They are straight grass seed containers that took 3 weeks to colonize and they were then given 10 full days to consolidate, so they've had plenty of time to eat the seed.

Obviously not all of them have been in the greenhouse 8 days, only the first, but I just don't understand what's up.

My greenhouse is always above 90% and fae is not the problem because I have a v4500 pumping constant humid fresh air in from outside the fc.
I've got a 12/12 schedule I've kept with the 6500K bulbs.

The only thing I can even think of is the fact that I haven't misted or fanned at all, until recently I thought it was just for humidity and fae but apparently evaporation off the substrate is a pinning trigger.  If that's the only problem I'll just get a spray bottle.
But I doubt it because the casing layer (miracle grow moisture control, pasteurized) began at field capacity and has since dried significantly, sounds like evaporation off the substrate to me.

The mycelium has colonized the majority of the casing layer but rather than pinning the fibers seem to be trying to climb up and out of the container, once again it is not possible for it to be excess Co2 as the air is constantly replaced 24/7.

Any ideas?

Here's pictures.
The first one is the one that's been in the fc for 8 full days
The second is one that's been in it for 6 full days, the weird white thing is mycelium I scraped off the lid and dropped in there
The third is to show the hydrometer, it looks like it says 59% but I assure you it actually reads 99%

You were right all of them are currently flushing beautifully, it took 11 days to start pinning
