eatyualive said: I forgot to mention. I use the 30 minute boiled water bath method for LI. It makes the grain a bit drier so the Li and grain have the perfect water content. If you have alot of issues with Li and bacteria you may be over cooking your oats. Going slightly Lower than perfect moisture content can be beneficial with the use of liquids if your inoculating with more than 5cc of Li solution. I had prepped my Las batch with the boiling method and the bottoms of the jars got a little overly wet than I like after my initial Li pour. After I inoculate then pour my Li, I like shaking to where the Li coats all grains. You wouldn't see any pooling water at the bottom of the jars afterwards. If you see this, you may be pouring too much or you may want to adjust the moisture content in your jars by cooking less.
Great advice. I've been experimenting with getting my WBS just right for LI and finding that leaving it dryer than normal works well.
I think I am going to try oats soon though. I've never done oats but they seem like the next step forward from WBS.

My oats came out pretty dark after the soak and seemed pretty wet after the PC, will they still be ok to use?

Shake em once cool. Should be fine but its hard to tell if you dont have a picture. They shouldnt be too wet. Let them strain in the strainer longer.

Ive overcooked grain before and Had it turn dark in color. This udually happens if there isnt enough water in the pc snd it runs out during the cook. The grain csn get toasty looking. But it hasnt caused issues iF you had your full pc cycle in.

Hey I just gave this a shot. Boiled water then took it off heat and added oats. Let sit for 45 minutes. However I seem to have a lot of burst grain. Does this look OK?

-EDIT-
Shit I think I used the wrong oats

Are you using whole oats? They look off to me and there shouldnt be that many burst grain. They dont look hydrated enough. You want whole race horse oats. Triple washed.

Recently i had a trich outbreak. My grain was clumping and bursting quite a bit more with the recent bag of grain i bought. So what i did was adjust my prep temps on the oats 5 minutes less than i have been for a total of 15 minute cook instead of 20 on method 2 and it has worked wonders. Different types of grain and even seasonal grain may vary slightly. This wasnt ever an issue for me in the last 5 years but only my last bag of grain. This new batch seems to be more heat sensitive and easily bursts. Its the same brand ive been using foe the last 5 years also.

Do you soak the grain? Slightly different but i prefer no soak as i find it less work in the end. Im not prepping for the soak and waiting til the next day. I can pretty much start grain and be done in 2.5 hours and jars are cooling.

Got some Pro'douchers Pride whole oats and am giving it ago! I know it might not be the best brand although it does seem very clean compared to WBS. 45 min soak after rolling boil produced a very nice hydrated oat...it was cooked enough that it would smash out the internals when trying to cut with fingernail.
90 min PC run @17 PSI and they looked fantastic coming out.
They are sweating a bit while cooling, which has me mildly concerned.
Does it go away like WBS sweat does after a day or so?

Once jars are cool you can shake to redistribute moisture.
