Ready to Harvest?

I am finally approaching the harvest time for my first grow. I made two casings, both the Australian strain. One of the casings seems to be a bit ahead of the other one, and I'm wondering if I'm ready for harvest. My problem is that the pinset wasn't even - there are some shrooms that are just beginning to pin, some that are almost completely mature, and many inbetween.

Here's a picture of the casing:


So what should I do? Gradually pick the shrooms as they mature? Pick them all at once? Only pick the mature ones? Thanks for your help.

Preference Eh. You just pick them whenever you like. Some people like early, some people like late. Don't let them sit too long or they get fucked up looking and will sporulate all over your casing... And that's messy!

When a majority of mushrooms get ready to pick, pick them, give the rest maybe another day to possibly grow bigger.

This one isn't ready for harvest, but the pinset is more even.

I allways picked them as I see fit like all day I keep going back to see if they are ready. They are ready to me right when the veil brakes or when its stretched out and ready to tear. But like right before I go to bed I pick the ones I think will tear and start to sporulate. But thats my method I dont mind the extra TLC
