So I work at A restaurant and I have been doing PC'd Short Ribs. They are fucking awesome, fyi. Very tender and flavorful and I can fit approx 15 - 20# in my 6qt PC. My question is if you PC some Substrates and Pasteurize others, am I running the risk of sterilizing my braising liquid and my beef, thus allowing for an excess of bacteria growth. Sterilized substrate contam's in open air because it has no defenses, whereas a pasteurized sub has natural defenses to protect it from bacteria and mold. Much like the difference between a regular braise vs. pressure cooking. This question is just for my own knowledge, i run through 20# of short ribs within about 5 days. 20# bone in short ribs = approx. 20 (5 1/2 oz) de-boned Portions

Your ribs didn't have beneficial bacteria either way.

That's the best way to prepare short ribs unless you have a ton of time/overnight. I don't think there's anything to worry about. The salt and refrigeration will inhibit any nasty's for at least a week.

What else do you cook in the PC? I do beans sometimes and veggies, but usually I use a much smaller PC so I can bring it up to pressure quick and quick release. I did honey and vinegar carrots, that were really good. They took approx. 4.5min.

My favorite thing to make in a PC is whole chickens. A four pounder takes about 35 mins and its totally fall off the bone and tender. I do this a lot in the winter. Pick the meat, add fresh veg to the broth till cooked through them add the meat back in and some drop dumplings! Its one of my favorite comfort foods and provides plenty of leftovers for at least a few days. I've also done pork butt for a quick pulled pork if I don't feel like messing with the smoker all day. Not as good but with a good sauce, no one complains. I've used the small one for risotto, with good results. Love my PCs, so useful for many things!

Damn, that sounds awesome. I think my next project is going to be a PC'd Kalua Pork with Sweet Potatoes & Cabbage. I also want to do a Philippine Adobo of Short Ribs.

That sounds great, take some pics! I'd love to see some nice finished short ribs. Haven't done them in way too long. It's blazing hot where I'm at, everything is either cold or done on the grill.

Here are a few recent ones. Sorry for the quality.
This is the first of the Adobo short ribs. It was a test batch so I ate it for lunch. No sauce, just over some brown rice and some carrots that were PC'd with the beef.

This is the short ribs on the menu. The pic is fuzzy,its PC'd short ribs, honey jus, butter fried potatoes, Slow roasted tomato and some quick sauteed greens. Nothing that's going to recreate the wheel, but they're top quality ingredients and they''re prepared well.

Any suggestions on what to serve with the Adobo short ribs tomorrow. Rice seems so obvious.

Those look really good. I always like mushrooms with just about any meat but I'm not sure if they go with adobo. I think some sweet red peppers and onions would be really good. Maybe something green?

We do beef soups regularly. Specially with taffelspitz it is quite delicious.
