Grafted Cacti died and graft stock put out a new shoot -- any idea what this is?

I bought a grafted ornamental cactus from Lowes, it had a orangish looking top -- maybe a moon cactus -- and the top ended up not making it.  However, shortly thereafter, the graft stock sent out a new shoot.  I always thought the grafting process intentionally made it so the aeroles were removed.

It looks almost like a type of dragon fruit but not sure..  thanks!

I wonder if they always use undatus or if it may be some other cultivar of Dragonfruit.  Is there any way to tell?  I have a bunch of undatus growing right now, it would be neat if it was different!
