So I would like to start getting into a daily routine with food and stretching. The hard part for me is food...
Every day I have been making myself a smoothie that consists of: a handful of strawberries and blueberries (and sometimes blackberries), a half pluot, kale, hemp oil, hemp protein powder, a dab of ginger, honey, and a tiny splash of apple cider vinegar. Now I have recently started adding half of a persian cucumber to this mix. I usually supplement this smoothie with 2 honey nut rice cakes topped with crunchy almond butter, but I figured I should switch it up with a couple eggs and red potatoes once in a while (perhaps alternate every other day).
For lunch I tend to just make myself crunchy peanut butter toast with chia seeds topped over it. And then for dinner I either have chicken with brown rice and broccoli (or bell peppers), or substitute the rice for red potatoes. Once in a while I will do both rice and red potatoes with some veggies...
Am I lacking something noticeable in my diet by making this my go-to routine? I am a very picky eater, so I would have no problem eating this every day, but my girlfriend likes variety. Any pointers for expanding my horizons? I need to start including nuts and seeds into my diet, but I'm at a loss for what else I should incorporate!

Have you experimented with quinoa or brown rice pastas at all? I generally avoid bread and wheat products and these are excellent in my opinion. They also go very well with chicken. Sweet potatoes are a great source of complex carbohydrates as are many types of beans.

Rarely...
I generally eat quinoa or brown rice regularly with veggies and chicken, but when I do eat pasta it is with brown rice pasta.

Yess new glad to see this you would benefit from nuts and seeds I prefer Almonds Pumpkin seeds pistachios fresh fruit smoothies are great try adding bananas and yogurt, hemp is amazing for your body aswell . Now I dont know your lifestyle and metabolism but IF that were me I would not be getting enough calories and nutrition which was a big mistake I learned when choosing to take a healthier path but I realize everybody is different I tend to be very active at all hours every day and have a very fast metabolism therefore I need to eat alot of good food often

Try some more variety like make 2 go to meal routines then switch them up every week. I was also a picky eater at first but once you push your comfort zone often you'll find a variety of tastes you never knew existed and will grow to like them take my word

Whole raw foods will give you the most bang for your buck nutrition wise and when your body has everything it needs from a wide variety of good foods you'll be shocked how much extra energy and enthusiasm is available

More veggies either with or in between your meals.
I make a fruit smoothie very similar to yours every morning for breakfast but with way more nuts & seeds + a vegan protein powder for additional protein and caloric fuel. Then at some point during the day I'll make what I call a "salad in a cup" smoothie, because I had eating salads, but I like having that boost of fresh raw veggies every day. I'll blend spinach, cucumber, carrots, ginger & a little squeeze of lemon in my smoothie cup.
Sometimes I'll do it twice a day if my veggie intake has been sparse.
