*disclaimer* I'm no expert but i do have about 4 oyster grows under my belt. Feel free to disregard if someone contradicts this info.
To me the mycelium in your picture looks very thick and consolidated which makes me think it's mature enough in age that it want's to fruit. lack of fruit point's to something environmentally being not quite right.
The top of your bucket with all the yellow pigmented liquid is as you said metabolites which are naturally produced by this species to fight off certain organisms. How ever the amount of it shows that its not happy/overly mature and that it's really trying to fight off contams until it can fruit.
Here is what i would do. Pull off the top's of all your lids and leave them off, Tilt the bucket and try to drain all the excess metabolites, then place them outside in a semi' shaded area and leave them. You mentioned cool nights which oysters love but the main benefit here is going to be the enormous boost of FAE compared to your indoor setup. In one week you should see fruit's, at that time begin watering with a garden hose liberally and make sure you have plenty of drainage on the bottom of your bucket so you can get another flush or two.

I was debating about getting a dry paper town and soaking it in.
I was also thinking about increasing the hole size with damaging the myc but the removal of tops could work too.

Your hole size is fine. What you need to concentrate on (i think) is in this order.
#1 is improving FAE ( i think your main problem) I think it's this fresh air passing over your holes that really allows/tell's the oyster "hey i made it above ground/ out from this log time to fruit!"
#2 you need a good amount of light *unlike most other mushrooms that prefer really shady environment's. * again this tells the oyster that it made it out of the log and triggers pinning/fruits.
#3 and this seems to be the least important that i have observed unlike many other mushrooms i have grown is RH % Oyster dont give a damned about Rh they really just care about substrate moisture as long as the substrate is properly hydrated it's pretty happy. Once it flushes the substrate loves to be soaked with a garden hose etc. but until then don't add any water to it.

Just added this, it us a UV-C fish tank filter. My pump is Lauder than i'd want it to be.
Don't have it on a timmer atm. So it would be running 24/7

Got it for 25 with free shipping price went up apparently. I know the airpump is not required just a tube out of the filter in air is what is recommend. I'm assuming the air pump would still work fine attached to the intake.

I don't use any filtration or treatment in my water and haven't had any issues with agle or nothing. Once a day a timer kicks on a tiny aquarium pump that purges the reservoir for 30 min. This takes with it any built up minerals and gunk and allows the pails to fill with fresh chlorinated tap water. Once every 2-3 weeks i hose out and dump my pails and rinse my swamp cooler mesh.
Right pail is 3 ultrasonics with $7 swamp cooler float valve, left pail is DIY swamp cooler with purge valve. The right pail feeds the left pail via a section of 1/4 beerline poly tube that's shoved into a small hole, no barbs or fittings. My swamp cooler mesh has a surfactant on it that causes the ultrasonics to not work so two pails are necessary. I've used 80mm computer fans but there a bit small, a 120v 4" fan works well especially with a speed control.

Well using it for increased fae mainly and mister puts light ibto the bucket so it's also just a small prevention

So still no fruits? Have you tried shocking them or placing outdoors when its cold and raining? One thing ive been doing to promote pinning is turn down my fan speed and bump humidity to 90% and drop the temps to 72-74. This is with phoenix oyster thou. Once i get pins ill bump up the FAE and drop humidity to 80-85
