I only needed ONE part from Ace hardware to install the new valve, a 1/4 x 1/8 reducing coupler. Juiceh, why did you recommend the 1/8 hex nipple??? It's completely unnecessary and an additional spot for steam/vacuum loss. See image.

They didn't have that part at home depot, and I was told they don't make the part I was looking for. If they did I would have grabbed it instead of 2 pieces for sure. I'll have to swing by ace to grab some of those.

That was the number on the tag. I could pull out the receipt and see if it's any different. In any event, it's a simple 1/4 to 1/8 coupler. It was around $4.50.

Damn I haven't checked in on this thread for a while. What did you all find out? I thought about retrofitting my 25x to work as a canner, mostly because I don't like that it pulls a vacuum. I usually wait until it drops to 1psi and then open the stopcock because I don't like having to suck a whole bunch of open air into it.
I guess once I build my hood I can just open the stopcock inside the downstream and just have sterile air sucked into it.

Juiceh: OK...I was able to purchase the last one of the couplers on your behalf today. The Ace Hardware staff, at my express request, have ordered a shit-load more. Folks who cannot find this item and want one or more need to contact me and I will acquire them in sufficient quantities to supply those in need.
$5.00 per coupler. I'd prefer to mail only to those in the continental USA. I suspect that's pretty much everyone participating in this modification.

I finally decided to give this a go, with the "control valve" and red plug. It could not have been easier, plug came right out with a push from a screw driver and went in with great ease. Old valve stem came out fairly easily, and new one went right in. Flip tab up to release steam, flip back down to close the vent. I went up to 28psi (according to the gauge anyway) without issue and that's as far as I dared go thanks guys!

When I first read this thread it helped me choose between going with the Presto or the All American pressure cooker, and I'm happy to say I'm now the proud owner of a brand new AA925. I have a couple of questions before plunging into this conversation, I read through the entire thread so hopefully they aren't unfounded.
First, which place do you recommend getting it from? Seems like people had problems with the EM version, should I go with the out-grow model? I've bought things from Mike before and been happy. Or is the AAC version worth the double cost? I really don't want to mess up my new PC. As I don't have a flow hood, would it be best to let the pressure vent after it hits 0 so as not to get the vacuum effect? I don't want to have to buy a new gauge if I can help it so it seems not letting it vacuum is probably the safest way.
