How to cook a Five Guys burger patty the right way 1

So I was making some burgers just now, and decided to look up some instructions on how to do it. I used to work at Five Guys, and it amazed me at some of the shit people are passing off as a Five Guys burger patty. Obviously none of the people on the web (at least the first page of Google) have ever worked there. Most of what I saw them do would either lose you your bonus from the secret shoppers or get you fired. It's not as simple as it looks. Seriously. They're Nazis about it.
First off, you need good meat. 80/20 ground chuck is what they use, and it's what I use as well. Have your grovery store grind it finely for you. It doesn't cost any more than the pre-ground shit and you can pick your cut of meat. Plus you know it's as fresh as possible.
I think they use Angus beef, but anyone who's been around cows will tell you there's nothing special about Angus cows. It's a marketing ploy.
Pre-heat your pan to 400 F. Use an IR temp gun. It matters.
Weigh out 3.5 oz of meat. Yes, weigh it. It matters if you want perfection.
Place it between 2 sheets of parchment paper. Smash it with something heavy and flat. I use a small iron skillet. Use some force, you only smash it once. Any more and you're fired. It matters. All the details matter if you want perfection.
Put it in your fridge for a while and let it cool. This regulates your internal temp.
Once you have your pan hot and your patty smashed and cooled, it's time to cook it. This is a 5:30 to 6-minute burger.
Place the patty in the pan. Smash it down immediately with a spatula. One shot, DO NOT smash it twice. This will dry it out and you'll be fired.
When you see it start to grey about 1/2 way up the patty you flip it. About 90-120 seconds. Do not press it again.
Watch until you see blood coming out of the top of the patty. When this happens, flip it again. Keep your eye on it and don't let it go too long. This is about another 3 minutes. The second stage is the longest cook time.
On the third flip, you cook it to well done. This isn't done to temp. Very specifically stated that it's not done to temp in the training videos. It'll sit in this stage for about 2 minutes. What you want is for the patty to be browned all the way through. Cut the thickest part to check it. If it's not completely brown, you're fired.
If you want cheese, you melt it on top of a single patty. If you want a double, you finish up one patty a little sooner to go on top, put 2 slices of cheese on your bottom patty during the last 30 seconds or so.
Once done, you tilt the patty(ies) up with your spatula to let a little grease drain, then go straight to your toasted bun. Don't drain all of the grease, just what comes off quickly. Grease is part of the final product, you just don't want too much.
And that's it. No resting. It honestly does help if you wrap your burger tightly in foil and let it sit for just a second. Think how long it takes you to get your food and get to your table. That long. It doesn't make a difference in the meat, but it makes the whole burger less likely to fall apart.
Now stop spending $10 on burgers that don't even have any seasoning.

That actually takes some know how and from the few times I've been to 5Guys, their customer service was through the charts. I hope they make more than minimum wage!

meh i was impressed with nothing about 5guys, it was like a slightly better wendy's burger, decent but still fast food.
i much prefer a grilled burger to a griddle burger and am open to whatever flavor/theme i am desiring. seem to be putting blue cheese and onion in the burger as of late.

Lol, well I am pleasantly surprised that 5Guys is using 100% 80/20 ground beef along with their locally sourced potatoes. It's not healthy, but when is red-meat and potatoes ever?
My favorite homemade burger has a little hot sauce, horseradish, cilantro, and garlic, mixed in. Eventually, it becomes an avocado bacon burger! Blue cheese sounds delicious, too!
