You are one of the lucky ones! Born with the green thumb! I'm used to pretty much everything else being naturally easy for me, but I really have to work to keep a plant alive. Maybe that's the appeal for me... 
I agree though, I think for the most part a humidity chamber is not necessary for growing sally. I don't even use one when rooting clones.

so my plant is still alive. Got a few new sets of leaves but the ends up them keep drying out.
I'm assuming I should listen to the plant and water more often? Started letting the soil dry out between waterings after seeing mold grow near the base of the plant one time. soil is so well draining its hard to keep wet for very long

Well, I say yes, listen to what your plant wants. But be aware, just because saliva leaves are drying up, doesn't necessarily mean you are underwatering. IMO, the best approach for watering sally is absolutely letting the soil dry between waterings. Let it go until about a day or half day before it begins to wilt...
I noticed a significant increase in my plants' happiness when I started doing this

Interesting...I'm just worried due to the low number of leaves. Probably only 6-8 on the whole plant, only 4 of which are good sized.
Maybe I overwatered it to the point that the roots rotted and now the leaves are drying because of this. It has been happening over a fair amount of time though

I'm not gonna lie. Every reason that saliva drops leaves is still a mystery to me after years of growing it... Many times, I attribute it to a humidity issue, an insect problem, or dying roots.
A lot of times, once I see that one of my plants is starting to lose a lot of leaves, I'll just go ahead and take clones in case the plant is on its way out. I keep a vicious cycle going of older plants dying off and new clones being taken.
Long story short, I can't really say why your leaves are dropping....
