On the gourmet section a guy posted a full hypothetical cost of growing mushrooms from the cost of sterilization to transportation of the mushrooms. I found it on the search function but can't find it anymore.

Ask and you shall receive...
This is a bit out of date but it might serve to give you some ideas...
Sheets:
Budget 2015 Change the figure in the yellow box "desired monthly growth"( I think you're limited to either 10,20,30,40) to see real changes in sales, expenses and profit (derived from detailed information on the next sheet)
Inc&Exp Again, change the figures in the yellow boxes to obtain different results (rendement attendu means projected yield in French, I forgot it when I was translating!)
This sheet has most of the relevant information. If you scroll down to the "detailed" section I have itemised each possible expenditure and then tied it into the desired output (from the yellow cells at the top of the sheet). This means that you can take something like a change in your electricity rates or finding a cheaper source of grain and you only need add that information in one place in order to see all the changes it has on your expenses.
Graphs Picks up all the data from the previous page and makes a few pie charts to make things pretty
(obviously your expenses won't be like mine! I'm not paying any rent or utility bills for one thing!)
Enjoy

Here is a calculator i threw together just now. Let me know if the file works. It only shows the first years cost and expenses, just set initial equipment cost to $0 for year two unless upgrading equipment.

Labour lol. I got it to work! nice spreadsheet!
Crazy how low cost a mushroom operation is. How many hours a week would you say you devote to your business? I take it this is a new side business by looking at the sales and production scaling up.

Thanks, its my geeky pleasure
I haven't yet added it up but I'm pretty sure that if we had to pay utilities things would cost a lot more! We also have a very advantageous tax position so this is another factor that needs consideration.
As we're still in the startup phase I generally put in a 30 hour week and my partner 10-15 hours. I think that its possible we will be able to bring that down to 30 hours total in the medium term but we will see!
This is our primary activity but we have the advantage of government income support whilst starting up and a generous grandmother who helped us avoid having to go to the bank. Our sales are now around 20-30kg a week, 30kg being the bare minimum we need to run the business and cover our operating costs. We have our organic inspection today which, fingers crossed, will allow us to access the well-developed organic supermarket network here - essential if we are to maintain sales through winter when the reduced tourist influx diminishes restaurant interest...
