Cake check + timing questions

Hello Shroomery!
I'm doing my first PF Tek over here and I've got a few questions. Using the "Lets Grow Mushrooms!" techniques, I inoculated 8 jars on August 1st. Now, almost 3 weeks later, half of the jars are fully colonized (fairly thick mycelium covering every inch of substrate) and half of them are only partially colonized. Also, it appears on the fully colonized jars that moisture is starting to build up. Its not standing water but it does coat the sides of the jar. See pictures below for all of this. SO, here are my questions:
- Do I need to worry about this level of moisture in the jars? - I'm leaving town for 5 days on September 8th > Based on the progress of my jars, would it be a bad idea to wait until I get back to birth my cakes? My only concern is finding someone trustworthy to come over and turn on the lights in the morning, mist the cakes a few times a day, etc. - If I do decide to birth them before going out of town, can I birth them as they are ready or do I need to birth them all at the same time?

I'd say leave them in there till you get back, they'll be fine probably

They'll be good to sit there for a while mate. Your condensation inside the jars isn't anything to worry about. Birthing them all at the same time won't make them pin at the same time. I've birthed most of mine on different days. When each cake is ready y'all know?
